Founded in 1829 in the grand-cru village of Aÿ, Bollinger makes powerful, Pinot Noir-dominant Champagne, fermenting its reserve wines in old oak and ageing on the lees far longer than required.
Its rarest wine, Vieilles Vignes Françaises, comes from a few tiny ungrafted plots that survived phylloxera.
