Bruichladdich plays Islay against type: its signature malt is completely unpeated, a flower-and-barley dram that shocks people expecting smoke. Then it turns around and makes Octomore, the most heavily peated whisky on earth. Revived in 2001 by a band of independents and run with Victorian equipment, it champions Islay-grown barley, farm-by-farm bottlings and unchill-filtered honesty — wine thinking applied to whisky.
