Glengoyne

Glengoyne straddles the Highland line — it distils in the Highlands and matures across the road in the Lowlands — and makes a point of doing everything slowly: air-dried unpeated barley and the slowest distillation in Scotland, for a clean, fruity spirit that takes sherry oak beautifully. Twenty minutes from Glasgow beneath a waterfall glen, it is many visitors' first distillery, and its apple-and-toffee malts reward the patience they preach.
